Funky BBQ Chicken Sandwiches
Let’s get funky and make some amazing grilled chicken! The K&Co. Funky BBQ seasoning adds a great flavor profile and bite to anything you can cook up. Chicken thighs are one of my absolute favorites and I think after trying this you will agree that this seasoning is truly something special.
Ingredients
- 16 oz. of chicken thighs
- avocado oil
- buns
- coleslaw
- baby Swiss cheese
- pepperoncini’s
- 2-4 tbsp. K&Co. Apothecary Funky BBQ
- 2 oz. mayonnaise
Step 1:
Get that chicken in a mixing bowl and go ahead and season the thighs up with 2 tablespoons of the seasoning and avocado oil.
Step 2:
Take 2 oz. of mayonnaise and mix with 1 tablespoon of Funky BBQ seasoning and let sit for 5 minutes after mixing well. Remix before spreading.
Step 3:
Get the grill to a medium-high heat and place the chicken on the grill. Use another 1 tablespoon of seasoning to re-dust them once on the grill. Cook the thighs to 165°F internal temperature.
Step 4:
Grill or toast your bun and place cheese at the base, then coleslaw, chicken, cheese, pepperoncini’s, and then spread a small amount of the mixed mayonnaise on the top bun.
