Ingredients

The Macho Turkey:

  • 1 lb Ground Turkey (93% lean is perfect)

  • 1 tbsp K&Co. Apothecary Greek Goddess Seasoning

  • 1 tbsp Olive Oil

  • 1/2 Lemon, juiced

The Bowl Base:

  • 2 cups Cooked Quinoa or Basmati Rice

  • 2 cups Fresh Baby Spinach or Arugula

Fresh Toppings:

  • 1 Cucumber, sliced

  • 1 cup Cherry tomatoes, halved

  • 1/4 cup Red onion, pickled or raw

  • 1/4 cup Hummus or Tzatziki

  • 2 tbsp Feta cheese


Instructions

  1. Sizzle the Turkey: Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey, breaking it up with a spatula.

  2. The Apothecary Bloom: When the turkey is halfway cooked (still slightly pink), sprinkle 1 tbsp of Greek Goddess Seasoning over the meat. Stir well for 1-2 minutes.

    • Why now? Adding the herbs while the meat releases its natural juices allows the dried oregano and garlic in the blend to hydrate and stick to the turkey.

  3. Brighten It: Once the turkey is fully browned and slightly crispy on the edges, squeeze the fresh lemon juice over it. This "wakes up" the herbal notes in the Greek Goddess blend. Remove from heat.

  4. Build the Bowls: Divide the spinach and cooked grain (rice or quinoa) into four bowls.

  5. Assemble: Top each bowl with a generous portion of the seasoned turkey. Arrange the cucumbers, tomatoes, and onions in sections around the meat.

  6. The Final Touch: Add a large dollop of hummus or tzatziki and a sprinkle of feta.
